Wheat Berry Salad
This Wheat Berry Salad recipe is easy to make, includes a variety of fruits and vegetables, features a vibrant rainbow of colors and textures, and is delicious.
Ingredients:
2 cups wheat berries
1/2 crisp apple
1/2 cup dried figs
1/2 cup pecans
1/2 cup parsley
1/3 cup olive oil
1/4 cup lemon juice
2 celery stalks
1 small red pepper
3-4 green onions
Lemon zest to taste
Vegetable broth
Optional: Pomegranate molasses
Instructions:
- Cook wheat berries in vegetable broth.
- Chop apple, dried figs, pecans, celery stalks, red pepper, green onions, and parsley into very small pieces.
- Combine olive oil, lemon juice, and lemon zest in small bowl.
- Combine all ingredients in a big bowl, stirring frequently.
- Optional: Drizzle w/pomegranate molasses.
Notes:
- Makes 4 servings.
