Wheat Berry Salad

This Wheat Berry Salad recipe is easy to make, includes a variety of fruits and vegetables, features a vibrant rainbow of colors and textures, and is delicious.

Ingredients:

2 cups wheat berries
1/2 crisp apple
1/2 cup dried figs
1/2 cup pecans
1/2 cup parsley
1/3 cup olive oil
1/4 cup lemon juice
2 celery stalks
1 small red pepper
3-4 green onions
Lemon zest to taste
Vegetable broth
Optional: Pomegranate molasses

Instructions:

  1. Cook wheat berries in vegetable broth.
  2. Chop apple, dried figs, pecans, celery stalks, red pepper, green onions, and parsley into very small pieces.
  3. Combine olive oil, lemon juice, and lemon zest in small bowl.
  4. Combine all ingredients in a big bowl, stirring frequently.
  5. Optional: Drizzle w/pomegranate molasses.

Notes:

  • Makes 4 servings.
