Avocado Toast with Kimchi

Looking for a new breakfast idea? Try avocado toast with a twist! This recipe features kraut-chi—a fusion of sauerkraut and kimchi—on top of avocado toast. It's a simple way to boost veggie intake and add fermented foods to your diet.

Ingredients:

  • 2 slices whole-grain bread
    ½ avocado
    ½ cup kimchi, sauerkraut, or kraut-chi (homemade or store-bought)
    2 pinches of salt and pepper
    Optional: Garlic, Shallots, or Sesame seeds

Instructions:

  1. Toast the bread.
  2. Slice the avocado thinly and fan the slices across the toast. Season with salt and pepper.
  3. Top the avocado with kimchi, sauerkraut, or kraut-chi.
  4. Optional garnishes include shallots, garlic, and sesame seeds.

Notes:

Kraut-chi is a creative fermented fusion of sauerkraut and kimchi. You can purchase kraut-chi at your local farmer’s market or health food store. You can also ferment it yourself!
